1 lb already packaged and cleaned fresh greens
(chard, kale, spinach, collard, turnip and/or mustard greens)
1 c. water or vegetable/chicken broth
Basic cooking instructions:
Over medium heat, simmer greens until tender (10-20 mins.)
Drain and cool; squeeze to remove extra liquid.
Chop and set aside.
Optional add ins:
1. Simply saute minced garlic in a little olive oil
only til fragrant. Add chopped greens, s/pepper to
taste and a bit of lemon juice. Toss and serve.
2. 1/4 c sundried tomatoes, sliced
2 T. minced fresh garlic
2 T toasted pine nuts
1/2 c pitted, sliced kalamata olives
and/or 1/2 c pimiento stuffed green olives
1 1/2 c roma tomatoes, chopped
add olive oil or broth and serve over pasta or as
a side dish.
3. Saute until brown 8 oz.sliced cooked sausage
Add 1 chopped onion and saute together 3-5 mins.
Add cooked greens or if raw cook for 20-30 mins.
in 2-4 c. chicken broth. Serve over white beans
with more broth as a flavorful main dish soup.
